“Something Good” Sunday

After Josh and I ate dinner last night, it was easy for me to decide on the good thing I was going to write about today. With it being Valentine’s Day yesterday, Josh cooked us a lovely dinner. He grilled filet mignon and asparagus that had a great vinaigrette/marinade type of seasoning on it. And then he made risotto. THE best risotto I have ever had. Which is not that much of a compliment because I haven’t had it but a handful of times and he had cooked it each time. But he really outdid himself with this one. It had sautéed onions, tomatoes, parsley, and goat cheese mixed in. My goodness was it delicious! Savory with a hint of tanginess and just divine.

This was our 25th Valentine’s Day together. In another 25 years when we are celebrating, I’m going to ask him something like, “Do you remember that one Valentine’s Day when you made that risotto with the goat cheese?” Yes, 25 years from now I will still be talking about how good it was.

I swooned over it all through dinner. Funny thing is, when I mentioned it again before we went to bed, he was surprised at my reaction. He said he thought it was good but not that good. Typical. We are our own worst critics. He said he started it off with following a recipe and then kind of did his own thing to finish it off. Whatever he did worked because, have I mentioned how good it was?

There was some leftover and I already had a bit of it for lunch today. I will savor the rest of it tomorrow.

Happy belated Valentine’s Day to all who celebrate. I hope you all had a great day basking in love. Whether the love of a partner, a pet, or simply loving a good meal. We are certainly all deserving of love.
